I. Carcass Chilling and Temperature Control
1. Inhibiting Microbial Growth
After slaughter, carcasses need to be pre-chilled using ice water or cold water, with the water temperature controlled within the range of 0℃–4℃. Low temperatures inhibit microbial growth, slow down enzyme activity, prevent meat spoilage, and extend shelf life.
2. Enhancing Meat Quality and Texture
Adding flaked ice during pre-chilling can lower the core temperature of the carcass to around 10℃, ensuring the meat maintains a bright color and firm texture. For example, after poultry slaughter, ice needs to be added to the pre-chilling tank to meet national hygiene standards.
II. Preservation and Cooling during Production
Rapid Cooling of Meat
Chillers can rapidly cool meat immediately after slaughter, reducing the risk of bacterial growth, preventing protein denaturation, and ensuring product quality.
Cold Chain Logistics Support
Ice produced by ice makers is used during transportation to maintain low temperatures and ensure the meat remains fresh during storage and transportation.
